An easy egg salad recipe you can assemble within 30 minutes for your lunch or light brunch using a few ingredients.

All you need is a few hard-boiled eggs,  leafy salad leaves of your choice, onions, tomatoes and some spicy condiment to give the boiled egg salad extra flavor and heat. 

The easy egg salad is all about having a dish on the table with a few pantry staples to make an easy-filling pantry meal.

If you are on a strict diet this simple egg salad, as it is can make lunch or dinner for you.

If you are serving with rice,  ditch the heavy meat curry, make this egg salad and add a vegetable curry like a beetroot curry, dry bean stir-fry, capsicum stir-fry(choose one), followed by dhal curry(optional and only if you have the time)and a devilled soya meat curry.

Just make sure to avoid serving starchy curries(like potato curry) with the egg salad as the taste of starchy curries and the salad doesn’t pair well.

Storing- best when made fresh and not stored but if you need to store it for a day separate the eggs from the onions, tomatoes, green chillies and salad. store in an airtight container.

Leftover egg slices- can be chopped up mixed with cheese or butter and used as a spread to make sandwiches.

Leftover onions, green chillies, tomatoes. I had some left, I separated them from the eggs and then used them to make my next day curries.

If you do have any salad leaves left, add them to your compost bin.

 

How to make Sri Lankan egg salad.

Ingredients.

Ingredients mentioned below use standard measuring cups and spoons.

To hard boil the eggs.

5 eggs

Water as needed

4 tablespoons of Vinegar

1 teaspoon of salt

To make the egg salad.

2 medium-sized tomatoes

1 large onion(add more if you like)

2-3 green chillies chopped(substitute with any kind of spicy chillie, reduce if serving kids)

Bunch of salad leaves washed and drained completely.

Salt to season

1-2 tablespoons of Sambal Olek(totally optional but loved the store-bought condiment spooned over the eggs, you can substitute chillie paste with a little bit of lime mixed in or hot sauce).

Method

How to hard boil the eggs

If you refrigerate your eggs, take them out and let them reach room temperature.

Wash the eggs and set aside.

Place the cooking pan over the stove and gently place the eggs in the pan.

Pour enough water to completely submerge the eggs.

Add Vinegar(4 tbs)and salt(1 tsp), this would help with removing the eggshell easily. 

Boil the eggs for exactly 13 minutes, remove them from the stove.

 
 
Drain the boiling water and place them in your sink under slow running water from your tap.
 
How to make the egg salad.
 
Meanwhile, slice the onions(1-large), green chillies(2-3), tomatoes(2-medium) and place them in a bowl, season with salt, pepper and lime.combine well.
 
Place the green salad leaves on a platter, add a layer of the onion, tomato, green chillie sambol over it. set aside.
 
By now the eggs should be ready for you to peel.
 
Gently tap the eggs on your kitchen sink surface while moving the egg, so small cracks appear on the whole egg. now peel the eggshells.
 
Once you’ve peeled eggshells off. slice them in two and place them over the salad leaves, egg yolk facing up.
 
Add the rest of the onions sambol, spread a little of the sambal Olek over the yolk, season with a pinch of salt and pepper.
 
If you are going to serve the salad late then cut the onions, tomatoes a little late(30-45 minutes before serving time)and keep them separate.
 
Assemble everything 10 minutes before serving so the egg salad looks fresh.
