CHICKEN TERIYAKI RICE.

Teriyaki chicken rice bowls are what your busy weeknights need when you need to whip up a quick dinner for the family.

All you need to make this quick tasty teriyaki rice is some chicken cubes, fresh veggies or frozen bags of veggies, and a homemade teriyaki sauce.

Teriyaki chicken rice can be served as it is but if you want to add more side dishes to make a complete meal, here are some dishes you can try.

  • Steamed or roasted vegetables are great options if you decide not to add veggies to the teriyaki fried rice.
    Broccoli, cauliflower, carrots, asparagus, and green beans are easy to roast or steam vegetables.

If you are looking for light, healthy green salads then parsley and coconut salad or a parsley carrot salad can be served as well.

  • Use day-old rice to make the teriyaki chicken rice.
    • If you use cooked rice that is still warm the teriyaki rice will turn mushy.
    • Plan ahead of time and cook extra rice that can be used the next day to make the teriyaki rice for lunch or dinner.
  • Types of rice you can use – short grain rice, brown rice, and even basmati rice work.
  • Once you have your home-cooked rice chilled and ready, use a spoon or your fingers to break down the larger lumps before adding it to the wok/frying pan. This makes mixing easy.
  • Use only the recommended amount of rice and ingredients mentioned here, if you need to add extra cups of rice then double the amount of ingredients mentioned here as well.
  • Make extra teriyaki sauce(use my teriyaki sauce recipe, I have given the link above). add more teriyaki sauce to the fried rice to adjust the flavours to suit your needs.
  • Marinate the chicken cubes at least 30 to 60 minutes in teriyaki sauce for maximum flavour.
  • Add your favourite diced veggies that you have in your refrigerator or a cup of frozen mixed veggies.
    • diced carrots, beans, and leeks are some easy options.
  • Soy sauce adds a salty element to the teriyaki fried rice, when seasoning with salt keep this in mind.

  • Chopping board and knife.
  • Small bowl.
  • Medium-sized bowl.
  • Plate to hold the fried chicken cubes.
  • Large wok or frying pan.

RECIPE DIFFICULTY-EASY

The ingredients mentioned below use standard measuring cups and spoons.

500g of boneless chicken breasts(skin off)cut into 1″cubes
1/4 teaspoon salt
1/4 cup of teriyaki sauce

6 tablespoons of oil to be used as needed
1 large onion sliced or diced
2 tablespoons of minced garlic(can substitute with 2 tablespoons of garlic powder)
1 cup of diced carrots(or vegetables of your choice, refer to tips above)
3 eggs beaten lightly
1 tablespoon of sesame oil(optional, can use any oil)
3 cups of cooked and chilled rice(refer to tips above)
1/2 a cup of teriyaki sauce
1 tablespoon of soy sauce
Salt is to be used as needed(refer to tips above).
2-3 stalks of scallions to garnish(optional)

Place a wok or large frying pan over low-medium heat.

Pour in the oil(3 tbsps), once the oil is warm add the sliced onions(1 large sliced fine).

Cook for a minute or two, and then add the minced garlic(2 tbsps, substitute with garlic powder).
Cook until the minced garlic releases its aroma.

Add the marinated chicken to the pan. cook until they turn brown and crispy. this should take you 5-7 over medium heat.

Once the chicken cubes turn golden transfer to a plate.

Place the same large frying pan or wok over low-medium heat.

Pour in the oil(3 tbsps), diced carrots(or vegetables of your choice, refer to tips above).

Cook over low medium heat until the carrots and other diced veggies are semi-cooked, 5-7 minutes.
Reduce heat to low and gently push the cooked veggies into a side of the pan.

Quickly beat the eggs(3)and add into the pan of cleared space, add sesame oil(1 tbsp, optional, substitute with regular oil).

Gently scramble the egg for 2 minutes, then mix with vegetables and onions in the wok/frying pan.

Add the rice to the wok and combine the rice with the ingredients in the pan for a few seconds.

Add the rest of the teriyaki sauce(1/2 a cup)and combine well over low heat.

Taste the teriyaki fried rice and add soy sauce(1 tbsp).

Cook for another 3-5 minutes, remove from the stove, and let the fried rice rest for a few minutes.

Garnish with chopped scallions and serve warm.
