Remember the teriyaki sauce recipe I posted a few days ago?

Well, we are going to use that same sauce to create this spicy yet mildly sweet teriyaki chicken with peppers and onions.

It’s a favorite chicken pepper stir-fry, skillet dish my kids love. 

All you need to do is make the teriyaki sauce and combine it with the onions and peppers while making sure to combine the chicken tenders with the teriyaki sauce.

Make it at home.

It’s one of those recipes you’ll order at a restaurant and a few days later crave while watching a movie or having your regular meals.

The best part of the recipe is that you can easily adapt the dish into a quick meal for a weeknight or even a quick weekend meal AND make the teriyaki chicken when your craving hits.

Sometimes there’s just not enough time in the day…..

Keeping up with the house chores, the kids, cooking four or five dishes a meal both for the blog and for the family, the small daily chores, picking up the youngest from school, running a blog and trying to keep up the quality of the posts when it comes to images and recipe is a lot of work(feeling out of breath reading it?that’s how I feel most days).

There are days where I just rush home after picking up the youngest from school and only about 45 minutes to make lunch.

What do I do then?

I leave the chicken to defrost in a pan of water while I do the school pick up.

Use the rice cooker to get the rice done, make the teriyaki sauce in minutes, cut down the marinating time and my ever-handy wok to make this sweet and spicy teriyaki chicken.

If I’m not in a rush, I’ll add a few more veggies but this works as well.

Always and yes, there have been days I’ve given in and picked up lunch on the way but more often, I return home and make an easy meal.

What vegetables can I add to the teriyaki chicken?

There are a few vegetables that go well with teriyaki chicken.

If you are ever in doubt what vegetables to add, stick to vegetables that need less time to cook.

Broccoli, carrots cut into thin strips, green beans, peas and bean sprouts are the most common vegetables you can add to a teriyaki chicken.

For this recipe, I’m using bell peppers and onions.

RECIPE DIFFICULTY -EASY

Teriyaki chicken, bell pepper onion stir-fry.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

For the teriyaki sauce, follow the recipe for making teriyaki sauce.

1/4 cup teriyaki sauce

2 tablespoons of lime juice

750g chicken breast tenders, cut into bite-size pieces

3 tablespoons of oil

1 large red bell pepper cut into thick strips(remove seeds)

1 large green pepper cut into thick strips(remove seeds)

1 green chilli finely sliced(optional)

1 lime cut into thin slices for garnish(optional)

2 large onions cut into thick slices

Salt to season

Method

In a large bowl combine the teriyaki sauce and lime juice, transfer 2 tablespoons of the mixed sauce to a cup and set aside to use later.

Add chicken tenders into the bowl of teriyaki sauce marinade, mix together until the chicken is coated with it, cover and marinate for 15-30 minutes.

Place a skillet or wok over medium heat and pour in the oil, transfer the chicken pieces to the oil and stir-fry while saving the leftover marinade to make a thick glossy sauce.

Let the chicken tenders cook in the oil, constantly move the pieces so they brown evenly. 5-7 minutes into browning the chicken, add the leftover marinade to the pan, leave the sauce to simmer with the chicken for 3 minutes over medium heat or until the sauce thickens.

Once the teriyaki sauce thickens, add the bell peppers and onions.

Cook for another 5 minutes over medium heat while tossing the ingredients around. this would be the perfect time to check on the taste, season with salt if necessary, you can also increase the spiciness of the dish by adding extra chillies.

Cook until the teriyaki sauce has reduced and covered the chicken and bell pepper slices, remove the pan from heat.

Add the remaining spoons of teriyaki sauce to the pan, give it a quick toss and serve over a bowl of rice or noodles.
