Beginner’s tips on making browned butter for the bean stir-fry.

As easy as it is to make browned butter, it’s also easy to burn the butter so here are a few tips to make the process of making brown butter for the green beans easier.

  • Avoid any distractions or multi-tasking when you are browning the butter, you only need a few minutes for the whole process but the butter can easily burn.
  • Use a pan with a light bottom to the frying pan, this way, you’ll be able to see the transition of color as the butter cooks.
  • Maintain low heat throughout the cooking process and swirl the pan constantly to get an even browning to the butter.

1/2 cup butter
3 cloves of garlic sliced fine
3 slightly bruised cardamoms
500g of green beans(frozen beans can be used as well)
1/2 teaspoon freshly ground pepper
Salt to season

Method

Making the browned butter(read notes above).

Place a light bottomed frying pan over low heat, add the butter to the pan and let the butter melt over low-medium fire.

Continue to cook the butter until the oily liquid turns from light amber to a lighter brown.

Once the color of the butter changes to a lighter brown and to a darker brown, at some point in this process(roughly 5-7 minutes later), you will notice the nutty aroma coming from the browned butter.

Immediately remove from fire and transfer the butter into a small glass bowl. set aside.

How to stir-fry the green beans.

You need the beans to be slightly soft before adding it to the brown butter. 

If you are using frozen beans-

You don’t need to cook with extra water but cook using the ice which has been frozen in it.

If you are using fresh beans

Clean, wash, drain the beans, place them in the same frying pan, add 1/3 cup water or just enough water to soften the beans. cook until water evaporates and your fresh beans are slightly tender.

How to cook the green beans in garlic and browned butter.

Place pan over low-medium fire.

Pour a tablespoon of the browned butter, add the bruised cardamom and garlic slivers to the butter and saute for 1-2 minutes over low fire to release the aromas of the garlic and cardamom.

Maintain low heat and add the rest of the browned butter followed by the beans, season with salt, pepper and continue tossing the beans while cooking them.

Serve warm and enjoy.
