You’ll be making the quick vegetarian and vegan mushroom recipe with just 5 ingredients.

If you make curries then you probably have all the ingredients mentioned here, and if you don’t, I will simply give you a substitute for it.

Can I use canned mushrooms to make this stir fry?

Yes, this recipe is made with canned button mushrooms.

How can I use fresh button mushrooms to make the stir-fry.

Simply wash the fresh button mushrooms, leave them to strain excess water in a colander.

Use a kitchen towel to pat them dry, cut them to required size and cook as per recipe instructions.

How to make

sauteed

mushroom and onions

2 tablespoon of oil

1 medium-sized onion sliced thin(make it large if you want more onions)

3 pods of garlic sliced thin

2 cardamoms slightly bruised

1/4 teaspoon turmeric

1/4 teaspoon red chilli powder(substitute with hot paprika)

A can of button mushrooms(can use fresh mushrooms as well)

Salt to season

Method.

Drain the can of mushrooms and cut them into half. set aside until used.

Pour in the oil(2 tbsp)into a medium-sized frying pan heat over low-medium fire.

Add the sliced onions(1 medium, can use large onion as well), garlic(3 pods, sliced fine, cardamom(2, slightly bruised).

Cook over low medium fire, until onions turn translucent.

Add in the turmeric(1/4 tsp), red chillie powder(1/4 tsp), substitute with hot paprika).

Add the sliced button mushrooms, season with salt and sautee over low-medium fire.

Sautee until the edges of the mushrooms turn slightly brown and crispy.
Try to cook the mushrooms as long as you can to really get them crispy on the edges, move them around to to sautee evenly.

Taste and season accordingly.

Serve warm with any of the serving ideas given above.
