How to make beef fried rice

Please make sure to read the recipe instructions carefully to avoid mistakes.

Ingredients

The ingredients mentioned below use standard measuring cups and spoons.

2 cups of day-old leftover rice(refer to the tip above)

To marinate the beef

250g of beef slices cut into 1/2 cm thin strips
A pinch of salt
1 tablespoon of dark soy sauce
1 teaspoon of cornflour
1 tablespoon of oil

To make the sauce for the fried rice
2 tablespoons of soy sauce
1 tablespoon of oyster sauce
2 tablespoons of sesame oil(if you are unable to find sesame oil, use any oil available to you)
1 tablespoon of sugar
3-4 tablespoons of oil used as needed
1 medium-sized onion sliced fine
1 tablespoon of garlic(3 cloves of garlic minced)
1/4 cup each of different diced vegetables(carrots, peas, corn, beans, or use a 1 cup of frozen mixed vegetables)
2 large eggs
4 stalks of chopped scallions(to add with veggies as well as garnish, optional)

Method

How to cut the beef strips for the fried rice.

Make sure to pat dry the beef and remove any moisture.
Place the beef on a dry cutting board.
Cut and slice the beef against the grain and to very thin strips.

How to marinate the beef slices for the fried rice.

To a large or medium-sized bowl, add the beef slices(250g), salt(to season), dark soy sauce(1 tbsp), cornflour(1 tbsp), oil(2 tbsp).
Combine all the ingredients with the beef slices.
Set aside to marinate for at least 15-20 minutes.

How to make the sauce for the fried rice.

In a separate small bowl, add soy sauce(2 tbsp), oyster sauce(1 tbsp), sugar(1 tbsp), sesame oil(2 tbsp, if you are unable to find sesame oil, use any oil available to you.

How to make the beef fried rice.


Take out the day-old refrigerated rice, transfer to a plate or platter and remove all large clumps. set aside.
Place a wok or large frying pan over medium-high heat and add the beef slices to the pan and stir fry the beef until all liquid is absorbed and the beef turns slightly crispy.

Transfer the stir-fried beef slices to a bowl.
Add oil(1 tbsp), add sliced onions(1 medium), garlic(1 tbsp about 3 cloves of garlic minced).

Cook over low medium heat for 2 minutes.

Add your veggie mix into the pan, including some of the chopped scallions. toss and cook for 2 minutes over medium heat.

Once your veggies are done, move them to a side of the pan.

Clear a side of your pan to scramble the eggs.
Break the eggs(2), in a separate bowl, whisk and pour into the frying pan/wok.

Pour oil(1 tbsp)over the egg, reduce heat to low medium, and gently scramble the egg.

Once the eggs are firm and fluffy, add the stir-fried beef and the rice.
Maintain low-medium heat and break down the rice clumps using a spatula or spoon with a flat surface.
Add a teaspoon of water to make it easier to break down the rice.

Halfway through combining and breaking the rice clumps, add the sauce.

Combine the sauce with the rice and mix well. Pour in a tablespoon of oil if you notice the fried rice is dry.

Taste and make the necessary adjustments with salt and soy sauce, keep in mind that both these ingredients are salty so use only as needed and carefully.

Serve immediately while the beef fried rice is still warm, as it cools the dish tends to become dry.
