OYSTER MUSHROOM IN GARLIC BUTTER SAUCE

Oyster mushrooms stir-fried in a garlic butter sauce is a simple side dish made with a handful of ingredients.

Turning these oyster mushrooms crispy and then tossing them in a garlic butter sauce takes less than 15 minutes to cook.

Little chilli flakes, some chopped parsley, and a drizzle of lime or lemon juice are all you need to bring all the flavours together.

Medium-sized frying pan.

  • Can I use button mushrooms instead of oyster mushrooms?
    • Yes, not the canned versions but fresh mushrooms.
    • Personally, I find oyster mushrooms absorb more flavour and when sauteed properly, give an earthy yet crispy texture.
  • Can I double the oyster mushroom recipe?
    • Yes, I use 2 packs of oyster mushrooms as they shrink in quantity.
    • Make sure to use a large, heavy-bottomed pan as you want to spread them over the pan so they brown and turn crispy evenly.
  • Why did my garlic butter oyster mushroom turn soggy and less crispy?
    • If your mushrooms are soggy then you’ve used too much butter. if they are less crispy then the mushrooms have not been browned enough.

The ingredients mentioned below use standard measuring cups and spoons.

A pack of oyster mushroom

3 tablespoons of butter

2 cloves of garlic minced

1 teaspoon of soy sauce

Salt to season

1/2 a teaspoon red chilli flakes

1 tablespoon of chopped parsley(substitute with any type of your favourite fresh herbs)

1/4 teaspoon of lime or lemon juice(optional)

Prep work before making the garlic oyster mushrooms.

  • The oyster mushrooms.
    • Avoid washing the packaged mushrooms as they are cleaned and packed with a very short shelf life.
    • Mushrooms absorb water and washing them will make them soggy.
    • Separate the large mushrooms from the smaller mushrooms. you can leave them with their stem on.

  • Mince the garlic cloves.

Place the frying pan over low-medium heat, and add butter to the pan.

Once the butter melts, add the minced garlic.

Reduce heat to low and cook the garlic until the aroma is released.

Add the mushroom to the garlic butter, and maintain low medium heat.

Spread the mushroom and let each side cook for at least 2 minutes. avoid moving them around.

Then fry until the oyster mushrooms are crispy and turn brown at the edges.

Add soy sauce, and chilli flakes, toss for a few seconds.

Season with salt if needed. garnish with chopped parsley and drizzle lime juice.
