  • Pineapple.
    • Using fresh pineapple– you are using fresh pineapple, add more water to cook and soften the pineapple before adding ingredients.
    • Using canned pineapple-use both juice and pineapple chunks to flavour the sweet and sour sauce.
    • If you want to make the sweet and sour sauce without pineapple, simply omit the first steps of the recipe instructions in adding pineapple and proceed with the next steps.
    • Sugar– add less or more sugar to balance the sweetness.
    • Red chilli flakes or hot sauce– you can add red chilli flakes or hot sauce to add spice to the sauce.
  • Cornstarch.
    • The cornstarch in the sweet and sour sauce recipe thickens the sauce as you cook it.
If you want a thinner sauce then reduce the amount of cornstarch for a thinner sauce.
  • Chopping board and knife.
  • Medium-sized cooking pan to cook the sweet and sour sauce.
  • Wooden spoon.
  • Blender if you require a smoother sauce.

Store in an air-tight container or bottle. keep refrigerated for a longer shelf life.

You can freeze the sauce, I would recommend blending and making a smoother sauce before refrigerating extras.

You can remove it from the freezer and let it reach room temperature, give it a good stir and use as needed.

The ingredients mentioned below use standard measuring cups and spoons.

1 cup of cubed pineapple(cut a small pineapple or substitute with a can of pineapple)
1 cup of water
1 and 1/2 cups of sugar
1 cup of ketchup(tomato sauce)
2/3 cup white vinegar(use any type of white vinegar)
2 tablespoons of soy sauce
2 teaspoons of red chilli flakes(substitute 2-3 tablespoons of hot sauce)
2 tablespoons of cornstarch(also known as cornflour)

Cooking fresh pineapple for the sweet and sour sauce.
Place cut and cubed fresh pineapple in a heavy-bottomed cooking pan and add water.

Cook over low medium heat until pineapple cubes are soft and water is reduced in half.

If using canned pineapple, the above can simply add the canned pineapple to the pan and proceed with the next step of the cooking recipe instructions.

Add all the ingredients(canned pineapple with juice, ketchup, sugar, white vinegar, soy sauce, red chilli flakes).

Cook over medium heat and stir constantly until sugar dissolves.

If you find the sauce too thick while stirring, add 1/4 cup water to stir the sauce mixture smoothly.

In a separate bowl, add 1/4 cup warm water and mix in the cornstarch, stirring to remove any lumps.

Once the sugar dissolves, add the cornstarch mixture, and reduce the heat to low.

Stir and cook for a minute or until you notice the sweet and sour sauce thickening.

Taste and adjust the seasoning. remove from the stovetop, let the sauce cool and store in a bottle or air-tight container.

Always shake or stir before using.

Refrigerate and use when needed. the sweet and sour has a shelf life of 3 weeks.
