If you’ve never made milk toffee or failed to make condensed milk fudge over a stove, you are going to love how easy it is to make this milk toffee recipe using your microwave.
All you need is a can of condensed milk, sugar, vanilla, a little butter and the option of adding cashews.
For this milk toffee(microwave fudge), I have skipped using cashews as a personal preference but you can certainly add some.

- It doesn’t take you 40-50 minutes standing in front of a stovetop and constantly stirring until your arms fall out.

The working space and tools.
- You will need two thick mittens or heat resistant pan holders.
- Clear out space near your microwave. You will need the counter where you will place the pyrex bowl to be dry of water.
- When you take the bowl out to mix, it should not come into contact with water.
- To mix the condensed milk and the fudge mixture you will be using a heat-resistant spatula.
- Always be aware that you are working with an extremely hot fudge mix and handle the bowl with extreme caution without any kids or distractions around you. At least the first time you make it so you get a hand of the process involved.
Prep work before making the milk toffee.
- Always blitz the sugar to powder, this helps to reduce the time in dissolving the sugar crystals. You might have to shake your blender a little(with extreme care)to get all the sugar to a powder.
- Have a square fudge tray, buttered and ready to pour the milk toffee mixture.
- Follow the recipe instructions to make the microwave fudge as closely as possible.
- Be extra careful when taking out the bowl and putting the bowl back in repeatedly inside the microwave.
- Transferring the fudge mixture from the bowl to the tray takes a little getting used to. Trying to get all of the fudge mixtures to the tray while it’s still hot and avoiding burning yourself while flattening and shaping the fudge at the same time can be tricky(that’s three actions you are trying to do at the same time). This last process might feel a bit difficult your first time but once you make the milk toffee a couple of times, it becomes easy.
- Cutting the microwave milk toffee should be done within 5-10 minutes after pouring it onto the tray.

How to
make
milk toffee.
(microwave fudge)
Please make sure to read the recipe instructions carefully to avoid mistakes.
Ingredients.
Ingredients mentioned below use standard measuring cups and spoons.
1 small tin condensed milk (390 ml)
3/4 cup sugar
1 teaspoon butter (extra butter for the tray and to help shape the fudge)
1 tsp vanilla
Method
Butter a flat fudge tray to pour the milk toffee into.
The tray I’m using here is for making fudge so the sides are quite low, unlike the usual cake baking trays.
You can use a baking tray but spreading it and flattening the edges would be difficult as the tray will be deep and getting the spatula to the edges will be hard but not impossible.

Add the measured sugar(3/4 cup) into the blender, and pulse it a few times.

Pulse or blitz until the sugar reaches a powdered consistency.

Add the condensed milk(1 small tin)to the dry microwavable glass bowl.
Followed by powdered sugar. Stir the sugar with the condensed milk for a minute or two.

How to microwave
the condensed milk
to make the milk
toffee.
From this point on, the process of making milk toffee is a repetition of 3 actions.
1/ microwaving the condensed milk to the exact timings mentioned here.
2/ opening the microwave door and letting it settle back to avoid the condensed milk spilling over.
3/ taking out the milk toffee mixture to stir for 3-4 minutes, which helps in giving it a smooth texture as well as removing a little heat as you microwave it.
1st step
Place the bowl with the mixed condensed milk and powdered sugar in the microwave.
Microwave for exactly 3 minutes.

Use the mittens or heat-resistant pan holders to carefully take out the hot mixture.
Place it in a dry place and stir for 3 minutes.
Use mixing and pouring actions to remove heat as much as possible.
2nd step
(allocated microwaving time, 2 minutes)
Place the bowl back in the microwave.
Microwave again for exactly 1 minute and 30 seconds.
Open the microwave door. You will notice that the mixture would have risen close to the lip of the bowl.
Leave the microwave door open and let the mixture completely settle back(30-50 seconds).
Close the microwave door and microwave for 30 seconds.
Remove the bowl from the microwave and stir for 3 minutes to reduce heat (again using pouring and stirring action).

3rd step
(allocated microwaving time, 2 minutes)
Place the bowl back in the microwave.
Microwave again for 1 minute and 30 seconds.
Open the door and let the mixture settle back for(30 seconds)and then microwave the last 30 seconds.
Remove the bowl from the microwave and stir for 4 minutes to reduce heat. repeat pouring and stirring action to reduce heat as much as possible).

4th step
(Allocated time, 2 minutes)
Microwave for exactly 1 minute, open the door and let the mixture settle back(30-40 seconds).

Close the door and Microwave for 30 seconds.
Leave the door open and let the mixture settle back(30 seconds)and then continue to microwave for another 30 seconds.

Remove from microwave, add butter(1 tsp), vanilla(1 tsp), and stir for 1 minute to remove heat as much as possible.

5th step.
Allocated time 2 minutes.
Microwave for 1 minute.
Open the door and let the mixture settle(30 seconds).
Close the door and then microwave the remaining 1 minute.

Stir to a smooth mixture for a few seconds.

How to transfer the
milk fudge mixture
to the tray.
Remove the fudge mixture from the microwave.
Stir vigorously to smooth out the mixture for 5 seconds and then immediately pour onto the tray.
As mentioned in the beginner’s notes, pouring the milk toffee mixture will be a little difficult with you trying to handle the heavy glass bowl.
Try to pour most of the mixture into a corner of the tray, then use the spatula to scrape the rest from the bowl to the tray and flattening the fudge mixture.
You will have like a few minutes to pour the mixture and begin flattening and spreading it before the milk toffee mixture hardens.
I have a trick for this, once you have the mixture all on the tray and flattened it out, brush a little butter(this should be less than 1/4 teaspoon, do not add more!).
Brush it over the fudge surface quickly, and use the spatula to smooth it out.
Let the milk toffee cool down for 5 minutes. You’ll notice the surface of the milk toffee lose its shine on the surface as it hardens.

Let the milk toffee slab cool for another 2 minutes and then cut them into slices using a thin sharp knife, start from the outside edge.

Amazing recipe! I have been struggling with rock hard milk toffee this new year season so I thought I will give your recipe a shot. It was my 3rd try and my 3rd recipe. We followed your recipe to a T. It came out perfectly. My goto Kokis recipe is also yours. Perfect kokis and milk toffee every time. Now if you could only come up with the perfect kavum recipe :)

Hi Madhusudan, thank you for your kind words and glad the recipes are helping you. Regarding the microwave fudge, unfortunately, my microwave does not have a setting as you have given(150,300,600,900)but to find out I did the boiling point test(will add this test on the recipe when time permits). my cup of water boils within 2 minutes so I believe it is 900. I apologize for not being able to give you the exact setting but a guess since my microwave runs on one setting which I believe is high. If you do make the recipe please let me know, how the results were. Stay safe and regards J
