Making a fruity stir fry is easy as cutting a few slices of green apples and stir-frying them with onions, turmeric and a kick of heat with some chillie flecks.

 

From start to finish, it will only take you 15-20 minutes to get this vegan, vegetarian apple stir-fry on the table.

 

 

You can make this apple stir-fry by using granny smith apples. 

 

Serve the apple stir fry with a few skewers grilled meat or any type of baked meats. the sweet and slightly sour taste of the green apples compliments apples

Utensils and appliances needed.

Chopping board and knife.

Skillet or large frying pan.

 

Storing- once cool, store in an old plastic container as the spices and oil will stain new containers.

 

Reheating- reheating is not necessary as the apple stir-fry can be consumed at room temp. remove from the refrigerator and let it reach room temp.

 

Freezing- avoid freezing.

 

Stop food waste by- add leftover to anything from fried rice to your pasta dishes. the apples will only add more flavor.

How to make Apple stir-fry

Ingredients.

Ingredients mentioned below use standard measuring cups and spoons.

2 tablespoons of oil

4-5 curry leaves(substitute with 1 bay leaf)

1 large onion sliced fine

1-2 cardamom slightly bruised

1/4 teaspoon turmeric powder

3 granny smith apples(green apples)

1 teaspoon of red chille flakes(decrease or increase by 1/2 teaspoon as per your need)

1 teaspoon of sugar(optional ingredient to balance the sourness of the apples)

 

Method

Have all the ingredients ready including the apples.

 

The core of the apples should be cut out and the apple should be sliced thin. 

 

Place a large frying pan over low fire, add oil(1-2)tablespoons, curry leaves(4-5 leaves, substitute with a bay leaf) and sliced onions(1 large).

 

Cook the onions until they turn slightly brown over medium heat(3-5 minutes).

 

Add the cardamoms(2), turmeric powder(1/4 tsp), combine with the onions.

Add the sliced apples to the onions(3 green apples), add red chilli flakes(1 tsp. increase or decrease as per your need). season with salt.

Reduce fire to low and continue to cook the apples with the onions until you notice the onions turn golden in color. taste and season with salt if necessary. 

 

As you taste if you think that the taste of the cooked apples are a little sour to your taste, balance it off by adding a teaspoon of sugar.

 

Serve warm or cold around any of your favorite grilled meats.
