cucumber stir fry

(vegetarian/vegan)

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

1 large cucumber

2 tablespoons of oil

1/2 teaspoon of Turmeric powder

2-3 whole dry red chillies

1/2 a teaspoon of mustard seeds

1/2 teaspoon of red chillie powder(optional for heat)

1/4 cup scraped coconut(you can also use dessicated coconut)

Salt to season

Method

Wash and peel the large cucumber. here’s a step by step video on how to peel and cut a cucumber you might find helpful.

Cut the cucumber and scrape off the seeds. Cut them into 1/2 inch cubes.

Once you’ve cut them into cubes gently squeeze out any liquid and add them into a bowl.

Place a cooking pan over low fire and add oil(2 tbs) into the pan.

Add turmeric(1/2 tsp) and dry red chillies(2) to the cooking pan.

Cook until the red chillies plump up and then add mustard seeds(1/2 tsp) and red chillie flakes(1/2 tsp).

Constantly move the spices around and maintain low heat, cook for 10 seconds.

Immediately add the cucumber cubes and cook for a few minutes(2-3 min).

Add the freshly scraped coconut(1/4 cup), season with salt and cook for another 3-5 minutes.

Taste and check if you need more salt. Continue to cook for 2 minutes and remove from the stove.

Serve the cucumber stir fry with any of the Sri Lankan meal ideas given above.
