less time to write, cook, photograph and post recipes or the calm and quiet I need to get through the day.

Not so this time, because this vacation begins with me, the terrible four and my blogging tools moving to another country for a few weeks.

There’s so much to see and absorb that sitting here writing the beginning of a recipe post simply doesn’t feel right or exciting enough.

You can’t imagine the times I’ve got up from my seat, looked out of the window, even though it’s too late to step out.

So if you don’t see me sticking to my usual schedule of posting, then know that I’m exploring the food and places this exotic country has to offer and inspire me to create more recipes you’ll want to try.

Keeping with my need to explore and taste the food, want to know the first thing I did?

No surprise here, while the family enjoyed Pizza margaritas(go figure), I enjoyed and tasted a real, authentic Thai Papaya salad.

Except for the fish sauce which my kids were complaining of(the smell was strong enough to cut through the aroma of sizzling pizza!)and the flesh of the fruit need to be white in color, the spicy Papaya salad that I made was spot on. click on the above image to make the recipe.

A different way of cooking eggs…

So you’ve scrambled, fried, poached, made an Omelette and now you need to do something different with your eggs, maybe give it a bit of a Sri Lankan touch like this Curried egg stir-fry?

Apart from frying your eggs or adding it into fried rice, I can’t think of any other way that eggs will compliment a bowl of rice.

Except for this recipe, where caramelized onions and eggs are made in the same pan, this is my go-to recipe when I run out of meat and need to have a substitute.

There’s nothing difficult in this recipe, it’s more of a practical one created out of the simplest of ingredients but if you feel you can make it better, then feel free to adapt it the way you want.

Eggs are the most versatile ingredient you can use anytime, there are so many ways to go with it. for this recipe the eggs are first hard-boiled and then fried both sides then topped with Caramelized Onions in the same pan.

Cumin, chilli flecks and Salt does the rest in seasoning the eggs and we are done.

Curried egg stir-fry with Caramelized Onions( Sri Lankan).

Please make sure to read the recipe at least once to avoid mistakes.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

5-6 eggs

4-5 tablespoons of Oil

1/3 teaspoons of Turmeric

1/2 teaspoon of Cumin powder

2 large Onions sliced

1/2 teaspoon of chilli powder

Salt to taste

Method

Place eggs in a pan of cold water without crowding them and bring them to boil. this should take a minimum of 10 minutes.

Once the eggs are boiled, drain the hot water and cool the eggs by placing them in cold water.

Peel the eggs once they are cold. Cut the eggs in half and set aside on a plate.

Since we are going to multitask by frying the eggs and caramelizing the onions at the same time, use a large skillet.

Place the skillet over low heat and pour in the oil.

Once the oil heats, add the Turmeric, sliced Onions, chilli powder, cumin powder and cook the ingredients until the onions become soft and not brown, about 10 minutes over medium heat. season with salt to taste.

When the Onions turn soft, move them to aside. add Oil if needed and then place the eggs, yolk side facing down and fry until they turn golden in color.

To Brown the Onions and fry the eggs at the same time, you need to control the heat between low to medium so both ingredients reach the final outcome without burning.

Once the yolk side is golden in color, move the Onions around the eggs so they caramelize evenly and then gently turn the eggs to fry the opposite side. Careful when turning as the hard-boiled eggs as the yolk might slip out but you can put it back again.

When the eggs and the Onions have fried and browned on the same pan, using a tablespoon gently mix the eggs and Onions together.

Season with salt if necessary and serve for breakfast or lunch. you can also top the curried over toast for an extra special breakfast.
