  • Tips.
    • Use a thicker noodle/pasta for better absorption of the sauce and ease of mixing
    • Cook the noodles or pasta to the correct consistency, not overcooked or undercooked. This could mean a few minutes less than the package’s recommended time.
    • The peanut sauce gives the dish its flavour, the recommended quantity gives you enough peanut butter sauce to coat the recommended amount of pasta or noodles.
      • If you add more pasta/noodles, the quantity of sauce will not be enough, and the peanut noodles will turn quite bland.
        Keep this in mind and use the exact amount or double the peanut sauce to use as needed

    • Can I make this peanut noodle recipe ahead of time?
      • I would suggest making the peanut sauce ahead of time.
      • An hour before the serving time, cook the noodles/pasta and toss both together.
    • Can I add veggies to the peanut noodles?
      • Yes, stir-fry some bell peppers, spinach, thinly sliced carrots, and cucumber can be added to this noodle dish.
    • What would be the best substitute for peanut butter?
      • Substitute with any of the other nut butter available to you. Cashews, almonds, and hazelnuts are a few you can try.

  • Chopping board and knife.
  • A heavy-bottomed pan to cook the pasta/noodles in.
  • Large strainer.
  • Wooden spoon
  • A large bowl to strain the pasta and noodles into.
  • A large frying pan or wok to cook the peanut noodles.
  • Storing – Leftovers can be refrigerated and consumed within 48 hours.
  • Reheating – Use a few tablespoons of water and warm the peanut noodles over the stovetop.
  • Freezing
    • If you are freezing the noodles, slightly undercook them.
    • Divide into your required meal portions.
    • Let the noodles cool before you pack them in a container and freeze.
    • For better taste, store the sauce and noodles separately and freeze. When you need to prepare a meal, defrost both components and mix over low heat.
  • For the spicy Peanut sauce.
    • Peanut butter– base ingredient for the thick sauce.
    • Soy sauce– adds Asian flavour and salty seasoning to the Peanut noodles.
    • Minced garlic- adds a pungent and strong flavour to the dish. Substitute with garlic powder.
    • Minced ginger– adds aroma and flavour to the dish. Substitute with ginger powder.
    • Sesame oil– an optional ingredient, adds flavour and fragrance to the noodle recipe.
    • Sugar or honey adds a slight sweetness to the dish.
    • Red chilli flakes– adds spiciness to the dish.
    • Rice vinegar or mild white vinegar
  • For the spicy noodle.
    • Fettuccine pasta or thick noodles– any type of noodle or pasta that can absorb the flavours.
    • Water as needed- to cook the noodles or pasta.
    • Salt to season
    • Crushed peanuts– optional and to be used for a crunch and garnish
    • Chopped green scallions– for garnish and flavour.

Add Peanut butter, soy sauce, minced ginger and garlic(substitute with ginger and garlic powder), sesame oil, sugar or honey, red chilli flakes, and white vinegar to a bowl.
Stir until you have a smooth paste. taste and make necessary adjustments with salt, spiciness, extra peanut butter, etc.
Add the sauce to a large frying pan or wok that can accommodate the noodles/pasta.

Making the spicy Peanut noodle.
Cook the noodles or Pasta as per the instructions on the package.
Drain and set aside. Avoid leaving the drained noodles for long as they will take on a dry texture.
Add the cooked noodles/pasta. Toss with the peanut sauce until well coated.
Make sure to do this for at least 2 minutes.
Do a final taste test and make the necessary adjustments.
Add your favourite chicken or beef stir-fry on top(I’ve given a few ideas above).
Add the cooked noodles/pasta.
Garnish with crushed peanuts and chopped scallions and serve while slightly warm.

Ingredients

  • Ingredients for the peanut sauce.
  • 1/2 a cup of peanut butter(crunchy or smooth, this will give you extra peanut sauce to use as needed).
  • 2 tablespoons of soy sauce
  • 3 cloves of garlic minced(substitute with 1/2 a teaspoon of garlic powder)
  • 1/3 cup water
  • 1 teaspoon of minced ginger(substitute with 1/2 teaspoon of ginger powder)
  • 2 teaspoons of sesame oil
  • 3 to 4 tablespoons of sugar/honey depending on how much sweetness to add.
  • 1 tablespoon of red chilli flakes
  • 2 tablespoons of rice vinegar(substitute with any mild white vinegar).
  • 300g of fettuccine pasta or thick noodles that can absorb the flavors.
  • Salt to season
  • Crushed peanuts(optional)
  • Chopped green scallions(optional)

Instructions

  • Stir until you have a smooth paste. taste and make necessary adjustments with salt, spiciness, extra peanut butter, etc.
  • Add the sauce to a large frying pan or wok that can accommodate the noodles/pasta.
  • Cook over medium heat for 2 minutes, just until slightly thickened.

  • Cook the noodles or Pasta as per the instructions on the package.
  • Drain and set aside. Avoid leaving the drained noodles for long as they will take on a dry texture.
  • Add the cooked noodles/pasta.
  • Toss with the peanut sauce until well coated.
