So easy to make with minimum ingredients, this peanut chicken takes your everyday store-bought peanut butter spread to make a crunchy sauce in which shallow fried crispy chicken strips are tossed.

You can serve this dish for lunch, or dinner or as an easy side dish for your family and friends.

  • Use boneless chicken cubes.
  • You can fry the chicken cubes without a coating of cornflour but the thin coat adds crispiness which goes well with the peanut sauce.
  • Taste the peanut constantly, you can adjust the flavours according to your need, add more peanuts, spiciness, and a little honey or sugar for sweetness.
  • If you have allergy restrictions then replace the peanut butter with a vegan cashew spread, or almond spread, I haven’t tried it but I can see this recipe made with hummus as well.

Storing- store in the refrigerator and consume within 48-72 hours.

Freezing- can be frozen for 4-5 weeks. let the peanut chicken cool, portion and then freeze. store extra peanut sauce separately to use as needed.

Reheating- let the chicken reach room temperature then warm over stove top or microwave in a micro safe dish for 30 seconds. use extra peanut sauce as needed.

How to make peanut butter chicken stir fry

The ingredients mentioned below use standard measuring cups and spoons.

Ingredients to make the peanut butter chicken.

500f of chicken breasts to be cut into 1″ cubes

Salt to season

4 tablespoons of corn starch.

4 tablespoons of oil to shallow fry the chicken cubes

1/3 cup peanut butter(any type of peanut butter would do, I’m using crunchy peanut butter)

3 tablespoons of soy sauce

1 teaspoon of hoisin sauce

3 cloves of garlic minced

1/3 cup of water

1 teaspoon of red chilli flakes

1 teaspoon of sesame oil(optional)

1 teaspoon of sesame seeds

A handful of scallions chopped

Methods

How to fry the chicken cubes.

Pat dry the boneless chicken fillets and cut the chicken into 1″ cubes.

Place the chicken cubes in a bowl, season with salt, add cornstarch, combine until they are well coated.

Add oil to a deep frying pan and shallow fry the chicken cubes.

This would take 10-12 minutes as you will need to turn the chicken frequently so they fry all sides evenly.

Fry until they are crispy and golden brown. transfer to a bowl and set aside.

To make the peanut butter sauce.

Add peanut butter, minced garlic, hoisin sauce, soy sauce, red chilli flakes, sesame oil and water into a medium-sized bowl.

Combine well until you have a smooth paste. taste and make necessary adjustments to suit you.

Transfer the peanut sauce to the frying pan you used to fry the chicken and cook over low heat until you notice the sauce thickening.

Add the fried chicken cubes, and mix until they are coated with the peanut sauce as it thickens more.

Transfer to a platter, garnish with sesame seeds, and chopped scallions and serve while still warm.
