Spicy tomato-red chilli-coriander bruschetta.

A refreshingly simple appetizer you can make and serve within 30 minutes.

A plate of Bruschetta is an effortless appetizer you can put together even while entertaining your guests, there’s nothing like fresh tomatoes topped over toasted bread with hints of garlic to start any meal.

For this recipe, I’m adapting the starter to suit Asian tastes by adding a bit of chilli and Coriander leaves instead of Basil, these two ingredients certainly add extra punch to the starters.

The simplicity of this appetizer, the extra punch may make this one of your favorite starters to serve at family gatherings and parties.

If you prefer the classic, then avoid adding chilli and replace the coriander leaves with Basil.

What type of bread should I use for the bruschetta?

Any type of crusty, rustic bread would do, ciabatta(a type of Italian bread) or baguettes are ideal for bruschettas.

How to cut and toast bread for the appetizer.

First, make sure to use a serrated knife that will cut through the baguette without the bread being mashed up as you’ll want the bread to keep its shape.

You’ll also want the slice to hold the mix of tomatoes and other ingredients without spilling over so cut the bread diagonally slightly thicker, maybe half an inch. for a better presentation try to cut all the slices evenly.

2 ways to toast the bread.

Using the oven– if you are using the oven, follow the recipe instructions needed to flavor the bread.

Preheat the oven to 200c, place the oil brushed bread slices on a baking dish, bake for 5-8 minutes or until the slices are golden brown.

Using the stove-top.

I’ve toasted my bread using this method,

Once you brush the garlic-infused oil on the bread, heat the pan over medium heat.

place the oiled side down and toast three or four slices at a time for 1-2 minutes or until they turn golden brown, make sure not to crowd the pan.

Once one side is toasted, turn it over and toast the other side slightly.

If you find there are charred residue on the pan, wipe or wash it off and begin the process again, this will avoid the bitterly charred crumbs sticking onto the slices.

How many tomatoes would I need?

If you are planning on making a big batch of these bruschettas, say 30 slices.

Calculate one medium to large tomato for three slices of bread, this should give you a rough idea of the quantity needed for each ingredient.

Try this version of serving bruschetta if you find the following recipe too basic.

Follow the recipe as given below, once you’ve topped the bruschetta with all the ingredients, add a few pieces of feta cheese and a drizzle of honey(not too much).

I find the combination of feta, chilli and honey complement each other. this version was a hit even with the kids too.

Ingredients

12 slices of baguette or sourdough bread

1/2 cup of olive or vegetable oil

5 large plum tomatoes chopped 

1/2 cup of fresh coriander leaves chopped

3 tablespoons of garlic minced(you can use 1-2 teaspoons of garlic powder if you have it)

3 red chillies finely chopped

Salt to taste

1/2 teaspoon of freshly ground pepper

2 tablespoons of lime juice

1 tablespoon of sugar(if you are drizzling honey, avoid adding Sugar)

Method

In a bowl, mix Tomatoes, a tablespoon of minced garlic, chillies, coriander, pepper, lime juice and sugar. taste and check if the ingredients are balanced, season with salt and set aside.

Place a skillet over the stove, leaving the pan to heat for a few minutes.
While the pan heats, in a separate bowl, pour in the oil and add 2 tablespoons of the minced garlic(or garlic powder), mix well.

Placing the slices of bread on a flat surface, brush the top of the bread with the garlic infused-oil, brush liberally.

Place the side with brushed oil facing down on the skillet and let the bread toast until it turns golden, three minutes over low-medium heat.

You can do 3-4 slices simultaneously without crowding the pan.

Clean any charred crumbs that might stick onto the toasting bread and proceed till all the slices have been toasted.

Set the toasted slices of bread on plates, mix the tomatoes and spoon enough of the tomatoes on top of each slice of bread, for best results, serve them immediately.
