Tips on making okra(ladies finger) fries.

  • Always use fresh ladies’ fingers to make this vegetable fry. If you make the fries with a few days old okras, the texture and the outcome will change.

 

  • The three-ingredient seasoning I’m using here also works as a filling for the vegetable fries.

 

  • You need to be very careful with adding salt. As you fry the okra, the salt taste tends to intensify. 

 

  • Try to add as much of the seasoning into the cavity of the okra, the seeds will tend to come off but that’s fine. 

 

  • The oil needs to be hot but not so hot that it smokes. This oil temperature needs to be maintained throughout the frying process.

 

  • In order to make the fries crispy and crunchy, you need to fry them until the skin gets dark but not burnt.

 

  • Make sure to do one or two at the beginning so you get an idea on how far along the ladies finger chips need to be fried to reach the required crispness.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

250g of fresh okra split in the middle.

1/4 cup semolina

1/8 teaspoon turmeric(a pinch)

1/2 teaspoon of red chilies powder(use as needed but not more than 1/2 teaspoon)

 

Method

In a bowl, mix semolina(1/4 cup), turmeric(1/8 teaspoon or a pinch), red chilli powder(1/2 teaspoon), salt. Combine well.

Wash the ladies fingers and pat them dry.

Slit them in two and place them in a large tray.

You can also do this on your cutting board but be aware that wooden cutting boards may stain because of the turmeric powder.

Add the seasoning mixture to the okra, toss until well combined. As you do this you can also stuff the mixture into the cavity of the okra. 

Don’t overthink the process of stuffing the okra with the seasoning mixture, just use your fingers to add any leftover mixture into it.

Once the ladies’ fingers are prepared and ready to fry.

 

Place a deep frying pan over the stove and pour in the oil.

 

Gently bring the oil to low medium heat. Add a little seasoning mixture to check if the semolina pieces sizzle and float, if so, the oil is ready to fry.

Maintain this heat by regulating the stove knob.

Fry the okra chips in small batches. This should take about 3-5 minutes. You need to fry the okra until they are crispy.

Once done, place them on some kitchen towels to drain excess oil. 

Serve with some lime wedges.
