Fried breadfruit two ways(sweet and spicy).

Make these fried breadfruit chips and you may come to like them more than your regular bag of commercial or regular potato chips.

 

In this recipe, not only do you learn the steps to make fried breadfruit chips and flavor them in two ways, you also learn how to cut and clean the breadfruit. 

 

What is breadfruit?

 

If I had to describe the breadfruit to you, I would say in size, it’s a little larger than an ostrich egg with a hard skin that has tiny raised bumps on the skin.

 

The fruit has a light yet bright green tinge to it.

 

When cut in half, you will find a core as well as a starchy part of the fruit which can be consumed boiled, fried, cooked baked or dried.

It’s a staple in many tropical countries(the Carribean and Polynesian island, Latin America and of course in Indian and Sri Lanka as well).

It has a considerable amount of starch and is a fruit that is enjoyed in various forms because of its texture.  

 

How to choose breadfruit.

 

  • The breadfruit is seasonal and you will find it only during certain periods of the year depending on the region you live in. 

 

  • The best fruit to be purchased is the medium-sized ones that you could use for any cooking needs.

 

  • When choosing one, make sure it’s firm on the outside and has the green skin with brown spots no other blemishes which could be a sign of the fruit being on the shelf for a long time.

 

  • The raw fruits have very bright green skin and the mature fruit softens due to being ripe.

 

Ways to prepare and cook Breadfruit.

 

Boiled – Cut it into wedges and boil in salted water until soft. Enjoy with freshly grated coconut and katta sambol (red chilli sambol).

 

Cooked – Cut it into bit-size pieces and cook as a mildly spiced curry in coconut milk . I’ve given the recipe for the breadfruit curry below.-

Breadfruit tastes great as an accompaniment with a Beef on the Bone Curry.

 

Fried chips as this recipe and used with various spice mixes.

 

Baked – Wedges or Pieces (Sweet or Savoury).

 

Puddings – the ripe ones are used to make puddings because of its naturally sweet taste.

Old newspaper or tray

How to make

fried breadfruit

chips.

 

Please make sure to read the recipe instructions carefully to avoid mistakes.
 
Ingredients
 
Ingredients mentioned below use standard measuring cups and spoons.

2 medium-sized breadfruit(for your first time, you can also use 1 breadfruit)

Water as needed

1/2 teaspoon of turmeric

Oil for frying

02 tsp chilli powder

250g of sugar

Salt to taste

 

Method

Once you start slicing off the thick skin of the breadfruit, you will notice the white sap oozing out through tiny pores of the fruit.

It tends to stick onto the knife, making it difficult to cut through the breadfruit skin.

There are two ways to avoid this.

1/ apply a little oil onto the knife only make sure the oil doesn’t get onto the handle.

 

2/An easier way would be to heat the knife over a flame when the knife is full of sap for a few seconds and then wiping it off with a tissue.

 

The sap is hard to get rid of when it gets onto your hands as well.

 

If you do get it on your hands, pour a teaspoon of oil rub vigorously and use warm soapy water to get rid of it but personally I would ask you to use disposable gloves.

 

It just takes too long and you need to wash a couple of times to get rid of the sap from your hands.

 

How to clean and cut breadfruit.

Place the breadfruit on some old newspapers or use an old tray.

Place the knife on the thick skin of the breadfruit and remove it in smaller slices while rotating the fruit around. how to cut the skin of breadfruit image.

 

Once you remove the skin of the breadfruit, wash the breadfruit thoroughly.

If you are still wearing the disposable gloves continue to wear it while you wash the fruit as well, you don’t want to get any last remaining sap on to your hands.breadfruit with the skin removed.

 

Cut the fruit in half(length-wise)so that you could further cut the breadfruit into wedges as shown below.

To make the fritters you need to cut each wedge in half and then slice it into chips of about 10-15 mm in thickness.

Cut the chips thicker, once fried they become quite pillowy and crunchy.breadfruit cut into chips.

 

Thes fruit tends to discolor once the skin is taken off.

Wash the breadfruit chips in water mixed with turmeric(1/2 tsp)and drain well to remove any excess water.

leave chips in a colander to drain water for 3-5 minutes before you begin frying them.

How to deep fry

the breadfruit chips.

 

Have a large tray covered in paper towels ready for the fried chips.

Place a deep frying pan over low-medium fire and pour in the oil.

let the oil heat and come to a steady temperature to fry the fritters. maintain this heat and avoid oil overheating or smoking.

Remove any excess water by squeezing the breadfruit gently.

Add the breadfruit chips in small batches and fry them until golden brown. this would take about 5-7 minutes. deep frying the breadfruit chips.

 

Once they turn golden brown, drain any excess oil back to the frying pan and then transfer the chips to the paper towels.deep fried breadfruit chips.

 

The image below, I have added for you to have an idea of how perfectly fried breadfruit should look like.

While the breadfruit chips just before the over-fried ones are pillowy and crunchy, the two top rows on top are not fried enough.

The chips fried too long will give a slightly bitter taste while the ones not fried enough will just have the same raw taste like the fruit in its raw state.

The latter can be fixed by refrying but not the first.

Once you’ve fried all the breadfruit chips, let them cool down and separate them equally to make the spicy and sweet chips.fried breadfruit chips

 

 

Salty and spicy fried breadfruit chips.

Use a large bowl or tray where you can hold all the breadfruit chips once the salt and chilli mix is done.

To this bowl, add chilli powder(1 tsp) and salt(1 tsp), shake to mix. 

Add the breadfruit chips to the same bowl.

Cover with a lid and shake to combine. keep in mind the spice mix can be adjusted as per the number of breadfruit chips you are using.spicy breadfruit chips image.

 

This savory version is a snack that you could keep eating and wanting more!

Even the kids would love having it, it’s way more healthy than any store-bought snacks.

It is also very popular street food.

Sugary breadfruit chips.

For the sweeter version, you need to prepare the sugar syrup first.

Into a heavy-bottomed pan, add the sugar (250 g) and water(1/2 cup).

Cook over low heat while stirring constantly using a wooden spatula.

Continue to stir the sugar syrup until you notice the syrup thickening as the water evaporates.

Once only the sugar syrup is left, it will start bubbling and reducing.

keep the heat as low as possible, as you want this process to continue without burning the sugar syrup or letting it form into hard candy-like consistency.

Continuously stir and as the sugar syrup continues to reduce, you will notice powdery sugar substance forming on the sides of the pan.

Immediately but gently add the fried breadfruit chips to the thick syrup and let it coat the chips while you combine with a wooden spoon.

 

Due to the sticky consistency of the sugar syrup, it is natural for the chips to stick together. Do not worry about this.

Switch off the flame and let it cool.

Once cooled, you will find it easier to separate the chips.

If you still find it hard to separate, a few gentle but hard whacks to the chips with a wooden spoon will immediately help you to separate them.

Keep a few of these clusters as they are as well.

The sweeter version will be an instant hit amongst your little ones and for all you sweet-tooths.

Once done, you could transfer these fritters into an airtight glass bottle/container and snack on it.

Usually these last just a day in my house.

You also hav the option of sweetening these fried breadfruit chips with kithul(jaggery)syrup.
