This pasta recipe is one of those weeknight meal ideas that you can easily make with a few ingredients.

The penne pasta dish is also known as penne arrabbiata which is made with cooked pasta smothered in a spicy tomato sauce.

Arrabbiata means angry which is a direct reference to how spicy the tomato-based sauce is.

This is one of my favorite pasta recipes to serve anyone who loves a ridiculous amount of heat(totally adjustable)to their meals.

If you are looking for an easy-to-make Italian dish that will make a crowd of Sri Lankans then this is it.

A weeknight meal for vegans and vegetarians.

Penne arrabbiata is ideal for any meatless meal nights or to serve any guests who are vegans or vegetarians who love spicy food.

How to make penne arrabbiata.

The key to this spicy and delicious pasta dish is the angry(arrabbiata) sauce.

Made with a tomato base, red chilli flakes, additional green chillies, garlic and seasoned to taste the way you like it.

Once you get the pasta sauce done, all you need to have dinner ready is to toss the arrabbiata sauce with the cooked pasta and parmesan cheese added at the end.

Because I do have younger kids, I usually add a tablespoon of sugar to the sauce or 1/4 cup thick coconut milk(substitute with cooking cream)or reduce the number of chilli flakes and green chillies I use in the dish.

If you are cooking for a small family with kids or two individuals, this penne arrabbiata recipe will probably yield more than you need.

What you can do is simply divide into portions and refrigerate. You can add some chicken or sausages to this portion, top it off with mozzarella cheese and make a weeknight meal of.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

To make the arrabbiata sauce.

3 tablespoons of oil

5 cloves of garlic chopped or minced(reduce to 3 if you want a less garlicky flavor)

1 tablespoon of crushed red chilli flakes

2 medium-sized onions sliced fine

4 medium-sized tomatoes diced(use a can of whole peeled tomato with the juice)

1 green chillies chopped fine(add more if needed)

1 teaspoon of thyme(optional)

1/ 2 teaspoon of black pepper

Salt to season 

A pack of good quality dry penne pasta

½ cup packed basil leaves

Method.

Have all the ingredients prepared to make the pasta dish ready.

How to make the Arrabiatta (angry) sauce.

Place a large pan over low-medium heat, pour in the oil(3 tbs), garlic(5 tbs), onions(2) and cook for 3-5 minutes until onions turn soft.

Add the green chillies and cook for another 2-3 minutes then add the crushed red chillies, cook over low heat for 3 minutes.

Add the diced tomatoes(4)or a can of whole peeled tomatoes to the pan.

Continue to cook over low-medium heat while breaking down the tomatoes with a wooden spoon.

Add the pepper(1/2 tsp), thyme(1 teaspoon)and cook over low heat. make sure you are constantly stirring and breaking down the tomato, season with salt and taste regularly while adjusting the taste to suit your need. 

As you cook the arrabbiata sauce, use your other stove to bring a large pot of water(5 cups)seasoned with salt to boil.

Add the pasta to water and cook for exactly 8-9 minutes.

Scoop out a cup of pasta water(be careful not to burn yourself here, use a ladle if necessary). set aside.

Drain pasta and set aside.

Once the spicy sauce is thick, add the reserved pasta water to it and cook for 10 minutes until the sauce thickens slightly.

Add the pasta to the sauce and gently toss or combine to thoroughly coat the pasta. 

Add the basil leaves and serve with a generous amount of parmesan cheese
