SRI LANKAN CHILLI LEEK FRY(VEGETARIAN, VEGAN)

SRI LANKAN CHILLI LEEKS FRY, A SPICY VEGETARIAN DISH MADE IN 20-MINUTES, IT DEFINITELY ADDS A KICK TO YOUR REGULAR MEALS.

Ingredients

2-3 tablespoons of Oil

1 medium-sized onion finely sliced

1/4 teaspoon Turmeric powder

3-4 leek stalks washed, cleaned and cut into slices

1/4 teaspoon chilli flecks

Salt to season

1 teaspoon of lime(optional)

Instructions

Wash and clean leeks, making sure you remove any sand or grit between the layers.

Slice the leek stalks thin and set aside.

Pour in oil in a pan and let it heat for a minute, add the slices of Onion, Turmeric and sauté for 2-3 minutes.

Add turmeric and combine with the onions, cook for 2-3 minutes until they turn translucent.

Once the Onions are cooked, add the sliced leeks, cook for five minutes over low heat until the leeks wilt. Mix the leeks with the ingredients in the pan until they are well incorporated.

Let the leeks turn slightly soft, add the chilli flecks, season with salt and cook for a few minutes over low heat. check for seasoning. Adding a bit of tang with a squeeze of lime will also help enhance flavors if this is your preference.

Serve with warm rice and other Sri Lankan dishes you prefer.
