  • 1/2 cup of hot chilli sauce
  • 2 tablespoons of lime juice
  • 1 tablespoon of chilli flecks
  • 1/2 tablespoon of ginger
  • 1/2 cup of ketchup
  • 2 teaspoon of honey
  • 500 g of chicken
  • 2 large Onions sliced
  • 2 medium-sized tomatoes sliced
  • 2 green chillies sliced
  • 1 teaspoon of sugar optional
  • 1/2 teaspoon of turmeric
  • 1/2 teaspoon Salt to taste
  • 250 g of Baby corn cut to required size


  1. Before you begin, cut the chicken into required size, add a 1/2 teaspoon(or less) Salt and a pinch of Turmeric, mix thoroughly, set aside to marinade while you prepare the sauce.

  2. To make the sweet and spicy sauce.
  3. Pour in the chilli sauce in a bowl, followed chilli fleck, ginger, lime, ketchup and honey.
  4. Mix all the above-mentioned ingredients, taste and make sure you’ve hit a balance with the sweet and spicy.
  5. Set the sauce and move onto preparing the stir-fry.
  6. To make the stir-fry.
  7. Use a medium sized skillet, set the fire to medium heat.
  8. Pour in the oil and add the Onions, Tomatoes, green chillies and cook for two minutes until they turn soft.
  9. Once all the ingredients turn soft, include the Baby corns and cook for another two minutes, letting the corn slightly brown.
  10. Include the chicken into the pan and cook until they turn golden, another two minutes.

    If you need the chicken to be browned more, fry the chicken separately in a separate pan and then add it to the stir-fry.

  11. Finally, add the sauce and combine until all the ingredients have been mixed, this will take 3-5 minutes. Season with salt if necessary and serve warm.
