How to cook couscous.
Boil 1 cup of water with 1/2 teaspoon of butter.
Add the boiling water to the couscous with a pinch of salt, mix well.
Cover and let the couscous sit for 10 minutes or until they turn soft and fluffy.
Use a fork to separate the couscous and set aside.
Make the honey-lime dressing.
Add apple cider vinegar, honey, lime, salt to season, sugar(optional)and whisk the ingredients together. refrigerate until you use it with the salad.
Making the salad.
Cut the apples into thin strips, squeeze in 1 tablespoon of lime juice(half a lime), mix the juice into the apple strips and set aside.
Cut the grapes and deseed them then peel and cut the oranges as well.
Place all the fruits in a bowl and then gently combine the couscous with the fruits.
Pour in the honey-lime dressing over the salad, combine well, taste and adjust seasoning as per your requirement.
Finally, add the mint leaves as garnish.
