BAKED BABY POTATOES-SHALLOTS(SHEET PAN SIDES).
BAKED BABY POTATOES-SHALLOTS WITH MIXED HERBS, THE PERFECT BITE-SIZE DISH FOR ANY MEAL, NOT TOO MUCH OR TOO LITTLE, YOU CAN SERVE WITHIN YOUR CALORY LIMIT AND NOT FEEL GUILTY OF INDULGING IN CARBS.

Ingredients mentioned below use standard measuring cups and spoons.
250g baby potatoes(this would roughly be about 20-25 baby potatoes)
1 tablespoon of Italian seasoning
1/4 cup olive oil or any oil you prefer
Salt and pepper to season
Peel the skin off the shallots and set them aside(see notes above on how to clean shallots faster).
Wash and scrub the potatoes well to remove dirt or any impurities, do not peel the skin(see notes above on,”Where to find baby potatoes in Sri Lanka).
Once you’ve cleaned the potatoes, cut them into half. you can bake them whole but cutting the potatoes in half, will make sure that they turn crispy and golden evenly.
Place the shallots and the baby potatoes in a baking pan, add the Italian seasoning and pour in the olive oil.
Season with salt and pepper and toss all ingredients well to combine.
Once you’ve tossed the potatoes and shallots with the seasoning, turn all the potatoes so that skin side is facing up.
Bake them at 190C for 30 minutes or until the skin side is crispy and golden. once the skin side is done, take out the baking pan and gently turn the potatoes so that the inside of the potato is facing up and bake for a further 20-30 minutes or until golden brown and crispy.
You can serve it as they are or transfer the potatoes to a platter, garnish with extra Italian seasoning and serve immediately while they are still warm.
