Spicy tempered Breakfast fried rice

A good way to use leftovers is this tempered breakfast fried rice. 30 minutes and a budget friendly recipe to keep in mind.

Phew! we are into our second week of wholesome filling breakfast ideas.

On a personal blogging note, when I started last week, I actually thought this would be a breeze but it isn’t and I’m having to stay up late just to keep up with the home front.

The recipe itself has not been an issue but the whole process of getting it into the blog and sharing with you has been challenging. But I’m loving it, it’s another hurdle to get through and once this breakfast theme month is done, let’s see if we can do this again in a few months. Yes?

Then let’s make this super easy tempered fried rice for breakfast. If you are worried about too much carbs in the morning then reduce the portion on your plate, better yet forget about plates eat it off the pan you cooked it in, it’s that easy.

Before moving onto our recipes, I just need to write about how versatile ingredient rice is, especially in creating budget-friendly, one-dish meals. as I mentioned before a rice dish can easily feed a large crowd and there are so many ways to cook and flavor it that you can go weeks without cooking the same recipe twice so make sure to have rice in your next shopping list.

BREAKFAST IDEA 6 –  SPICY TEMPERED BREAKFAST  FRIED RICE.

Spicy and tempered with mustard and chilli flecks the fried rice comes together with a sunny side up egg.Imagine if you can that egg yolk, once broken into, just oozing into the tempered rice, giving it a subtle, creaminess. I don’t know about you but this is just the kind of breakfast dish I look forward to.

If you are making this fried rice for the kids make sure to reduce the amount of chilli flecks you use. My kids love to add a dollop of tomato sauce to it . I’ve noticed something else, they also tend not to snack in between meals when they have a heavy breakfast like this tempered fried rice, the most they’ll have is a glass of milk till their next meal.

TEMPERED BREAKFAST FRIED RICE.

Ingredients

2-3 cups of cooked leftover rice

3 tablespoons oil

1 teaspoon Mustard seed

A handful of curry leaves

1 large Onion sliced

2 whole green chillies

1 tablespoon of red chilli flecks

Method

Place a non-stick skillet on medium heat and pour the oil.

Once the oil heats add the Onions, green chillies, curryleaves and gently fry it until it turns golden brown.

Add the mustard seed and fry for a minute or so then the chilli flecks and continue to cook for another minute. Don;t let the chilli flecks burn while the mustard cooks.

When you hear the Mustard popping, mix in the leftover the rice into the fried mixture and Salt to taste.

Once the rice is mixed in with all the other ingredients, transfer it into a bowl, use the same pan you used for the fried rice to make a perfect sunny side up egg and serve.
