I have a few recipes that have the Sweet and spicy theme going on, like my Mango curry or the Onion and egg puffs which both incorporate the combo I love, I feel one flavour enhances the other. It just works with almost any kind of ingredients.

And guess what? you can easily use the sauce I’ve made here with your favorite part of the chicken from wings to drumsticks, turning the dish into a great party appetizer.

How can I use this Sweet and spicy chicken and corn dish?

You won’t have to think long and hard about how to use this dish, it goes with everything. I mean it, mix it with noodles, serve it on Pita bread, even with bread, especially baguettes.

Serve it on a platter and just watch it disappear. Since it’s a mildly spiced dish the kids can enjoy it as well, mine did, although, they first picked out all the sweet corn first.

So my meal with this sweet and spicy chicken included a Pumpkin curry and a Beetroot curry, although this stir-fry doesn’t go with the Srilankan theme, it’s a great way to get the kids enjoy their extra vegetable curries, my little food bribe theory in play here.

Recipe-Sweet and spicy Chicken stir-fry with corn.

Ingredients

1/2 cup of hot chilli sauce

2 tablespoons of lime juice

1 tablespoon of chilli flecks

1/2 tablespoon of ginger

1/2 cup of ketchup

2 teaspoon of honey

500g of chicken

2 large Onions sliced

2 medium-sized tomatoes sliced

2 green chillies sliced

1 teaspoon of sugar(optional )

1/2 teaspoon of turmeric

1/2  teaspoon Salt to taste

250g of Baby corn( cut to required size)

Method

Before you begin, cut the chicken into required size, add a 1/2 teaspoon(or less)of Salt and a pinch of Turmeric, mix thoroughly, set aside to marinate while you prepare the sauce.

To make the sweet and spicy sauce.

Pour in the chilli sauce in a bowl, followed chilli fleck, ginger, lime, ketchup and honey.

Mix all the above-mentioned ingredients, taste and make sure you’ve hit a balance with the sweet and spicy.

Set the sauce and move on to preparing the stir-fry.

To make the stir-fry.

Use a medium-sized skillet, set the fire to medium heat.

Pour in the oil and add the Onions, Tomatoes, green chillies and cook for two minutes until they turn soft.

Once all the ingredients turn soft,  include the  Baby corns and cook for another two minutes, letting the corn slightly brown.

Include the chicken into the pan and cook until they turn golden, another two minutes.

If you need the chicken to be browned more, fry the chicken separately in a pan and then add it to the stir-fry.

Finally, add the sauce and combine until all the ingredients have been mixed, this will take 3-5 minutes. Season with salt if necessary and serve warm.
