Before starting my food blog, there was a time I thought of opening up a food stall, nothing big, just myself in front of a table, a blackboard with a menu and me serving up food.

 This was going to be my entry to the world of pop-up food stalls.

A scary thought but it was an idea born out of wanting to start something on my own.

The theme behind my food stall was going to be breakfast and one of the food items on the Sri Lankan breakfast menu was going to be crepes or what we Sri Lankans call pancakes(not the American fluffy version).

But of course, this was all in my head at the time, I’ll go about dreaming how to make it real while packing up kids to school or doing the house chores.

My sweet and savory pancakes were going to be a big part of that menu and one such variation was this recipe I’m posting today.

I knew my family loved it, I was pretty sure people who would venture to my small food enterprise would love it as well.

I mean who doesn’t love warm pancakes smothered in buttery, vanilla flavored jaggery syrup? 

Well as you know by now, that dream never happened but a far better version of the same dream DID happen and that is this wonderful food blog.

Oh yes, menus and pancakes.

Well as for the star of my menu, the pancakes with jaggery syrup?

Well, they are still a family favorite for Sunday breakfast. I make extras because sometimes these delicious crepes become lunch for the kids.

If you love to indulge on a Sunday breakfast made up of a sweeter dish then these pancakes with jaggery syrup are the way to go.

What is Jaggery syrup?

Jagger is basically a sweetener.

Just like maple syrup, Jaggery is a product of tree sap, in this case, the palm tree which is then turned into hard solids that come in different shapes. 

I am using the common variety of jaggery found in Sri Lanka which is darker in color but you can also find a lighter colored version of the jaggery in Thailand.

Taste wise they do taste different.

Can I substitute brown sugar for Jaggery syrup?

I’m sorry but brown sugar is not a substitute for jaggery syrup. 

 I wouldn’t recommend brown sugar, it will definitely throw the taste off.

Where can I buy Jaggery syrup?

If you are not living in Sri Lanka then your best bet would be finding a local Indian or Asian shop, I’m sure they will have it in solid form or in bottles.

This is how I love to eat my Jaggery syrup pancakes.

Stack a few pancakes on my plate, pour the jaggery syrup over the pancake, not drops, not tablespoons but a continuous pour, slice a few bananas, add them to the mix and savor the taste of a sweet breakfast.

Kitchen utensils and appliances to make these Sri Lankan pancakes with Jaggery syrup.

You will need a blender, a large bowl for the batter, a ladle to pour the batter, a non-stick frying pan or skillet, a spatula, a pan to make the Jaggery syrup.

Sri Lankan pancakes with Jaggery syrup(family favorites).

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.
For the masala gravy

1 cup all-purpose flour

4 eggs(room temperature)

1 and 1/2 cup fresh milk(room temperature)

3 tablespoons of melted butter( microwave the butter in a glass bowl for 5-10 seconds)

1/2 teaspoon vanilla

Salt to season

For the Jaggery syrup

1/4 cup water(helps jaggery dissolve without sticking to the pan)

1 and 1/2 cup of jaggery

2 tablespoons of Sugar(optional if you find the syrup is not sweet enough for you)

2 tablespoons of butter

1/2 teaspoon of vanilla

Pinch of salt

Method

Since I showed you to do a large batch of crepes in an earlier post, Let’s do a smaller batch and mix the batter in a blender for a quick fix. 

Gather all ingredients and make sure the eggs and milk are room temperature before proceeding with the instructions.

Have a bowl ready to pour the batter once you’ve blended the batter for the crepes.

How to make French crepes in a blender.

Add flour, milk, egg, butter, vanilla, salt to season into the blender.

Blend until all ingredients are combined(2-3 minutes), there shouldn’t be any flour lumps, the batter should be smooth.

Check if there is adequate Salt, once completely combined, pour the batter into the bowl. let the batter rest for a few minutes(10-12 minutes should do).

Making the blender crepes.

Place a non-stick frying pan or skillet over low-medium fire, brush the pan with butter or oil.

Mix and pour 1/3 cup or 1/2 cup of the batter(depending on the size of the pan you are using).

Move the pan in a circular motion so that the batter spreads thin and evenly over the surface of the pan.

Cook the crepes over low heat until the edges come off the pan, flip and cook the other side of the crepes until golden.

Repeat the process until the batter is over.

How to make the Jaggery syrup.

Place a medium-sized pan over medium heat and pour in the water.

Add the Jaggery, stir until it dissolves.

Reduce heat to low. add in the Sugar, vanilla, a pinch of salt and butter, stir and cook for 5 minutes or until the syrup reaches a slighter thicker consistency(not watery or thick but in between).

Taste and pour over the warm pancakes for best results.
