For the past week, I’ve been plagued with a chest cold and flu that seem to have zapped all the energy off of me. sorting out meals for the kids especially was a nightmare as I had to completely depend on take-out meals for a whole week.

I’m gradually getting back into my regular routine. the whole week I was down with the flu, the one thing I craved most was a home-cooked meal to revive dead taste buds that felt as if they’ve gone numb along with the flu. 

So to keep things easy and to have a simple homemade meal, I made this creamy nourishing chicken soup while I was sick.

Not only was it easy to make but a  bowl of this fragrant chicken soup was just the thing to revive a body still trying to recover from the flu.

Can I use Coconut milk instead of fresh cream as a substitute to make the soup?

You can definitely use Coconut milk but the consistency of the soup will change. The use of fresh cream gives the soup extra creaminess and smoothness that might be difficult to achieve with Coconut milk.

Ingredients

2 tablespoons of Butter

1-2 Onion finely sliced

2 tablespoons of flour

1/2 teaspoon of turmeric powder

4-5 cups of chicken stock(store-bought version should do, if you are in a hurry, use vegetable or chicken stock cubes)

3-4 Cardamoms

2 Bay leaves

1/2 inch Cinnamon piece

2 cups of finely shredded cooked or diced chicken

1 cup of fresh cream 

1 teaspoon of freshly ground Pepper(add more if necessary)

Salt to season

Chopped cilantro for garnish and enhance taste

Method

Before you start making the soup, have the chicken cooked and ready(by this I mean, boiling a chicken breast in 2 cups of salted water) once cooked, you can either dice it or shred them into thin strips, personally, I prefer the latter. 

Place a medium deep pan over low fire, add Butter followed by sliced Onions and leave it to sauté for 1-2 minutes or until they are soft.

Add flour to the butter and Onion to form a smooth paste(roux)over low fire. 2 minutes.

Pour in the stock, followed by turmeric, Cardamom, Bay leaves, Cinnamon to the pan of stock and let the liquid simmer over medium heat for 20 minutes.

Add the diced or shredded chicken to the stock, season with salt and pepper while leaving the soup over medium heat to cook for a further 15 minutes.

Reduce heat, pour in the fresh cream, stir and cook for a further 15-20 minutes until the soup turns slightly thicker. taste, season with Salt, Pepper if necessary.

Serve warm with toasted bread.
