My 5 Minute Pickled Salad

One of my quick fixes, a simple yet tangy salad that takes less than 5 minutes to make. If you love pickles this salad is for you. for the above I’ve used quantity for a single person.

Regarding the type of cucumber to be used the Japanese cucumber or any type that has a dark green skin will suit .

To keep the freshness, it’s best to make this just before serving as Cucumbers naturally let out water if they are kept too long. Let’s begin,

You will need

1-2 Japanese Cucumber

1-2 Red Paprika

2 Tablespoons White Vinegar

1/2 Teaspoon Sugar

1/2 Teaspoon Chilli Flecks

Salt to taste

Method

1.Using a vegetable peeler cut the cucumber length wise to get thin ribbons, leave out the part that has seeds.

2.Cut the paprika in to thin slices.

3.Place them in a shallow bowl and add the vinegar, Sugar and Salt, Gently mix everything together.

4.You can check on the taste, make sure the sweetness comes through.

5.Garnish with chilli flecks.

And you’re done.
