An easy skillet breakfast for lazy mornings, this can also be served for lunch as an additional side-dish.

The only hard thing about this skillet breakfast is slicing onions in the morning.

If you are not a morning person or for that matter hate chopping up onions so early then make this skillet fried eggs with caramelized onions for lunch.

Whatever time you decide to serve this dish, I can guarantee, you’ll enjoy it.

Shall I tell you who makes a better version of this fried eggs with caramelized onions in the family?

That would be my husband.

Reason?

Lots and lots of onions, he has no dislike of chopping onions for breakfast.

Me, I don’t dislike it just prefer to slice fewer onions in the morning.

Hence, my version of the recipe has less of it.

Let’s say it’s a lazy version of the more elaborate fried eggs in delicious beds of caramelized onions my husband makes.

He makes these eggs with a runny yolk that makes you want to dip your toasted bread while swiping a few cooked onions on the way to your mouth.              

There’s no separate recipe for mine and his. It’s just a matter of adding more onions(say 6-9 medium-sized onions sliced).

But for an easier rushed, breakfast in a skillet, you can try my version of the recipe.

Utensils and appliances needed.

Chopping board and knife to slice all those on onions.

Large to a medium-sized frying pan.

Eggs on spicy caramelized onion(Sri Lankan).

Please make sure to read the recipe instructions carefully to avoid mistakes.

Ingredients mentioned below use standard measuring cups and spoons.

Ingredients

4-5 tablespoons of oil

A sprig of curry leaves(optional)

5-6 large onions sliced thin(add more if you can)

1-inch piece cinnamon stick

1/2 teaspoon of turmeric powder

1 tablespoon of sugar

1 tablespoon of chilli flecks

Salt to season

3-4 eggs

1/2 teaspoon of fresh ground pepper

Method

Cut the onions into very thin slices and have them ready. if you want to make caramelized onion baskets where the eggs are fried slowly then add more sliced onions.

Place a large frying pan over low heat and pour in the oil.

Add the curry leaves, cinnamon, the sliced onions, turmeric and sugar.

Cook the ingredients in the pan over low heat until the onions turn golden brown in color. this should take about 12-15 minutes over low heat. once the onions turn brown season with salt and chilli flecks, combine well.

Cooking over low heat, spread the onions over the pan surface, make hollows in these onions where you want to add the eggs in.

You will be able to make 3-4 hollow baskets to hold the frying eggs.

Keep in mind, when breaking the eggs you want the yolk intact so break the egg as close as you can over the onions, make sure you avoid dropping any eggshells while you do this.

Once you’ve made these hollow spaces in the onions, gently break the eggs into these holes(when I say holes, they are not deep but more of shallow space to add the eggs).

Season just the eggs with salt and pepper, a pinch of chilli flecks(if you want).

Immediately cover with a lid and cook the eggs until they are done. 

You can cook the eggs just until they are done with a runny yolk or until the yolk is completely cooked. 5-7 minutes.

Serve as breakfast or as an addition to your lunch, preferably when the dish is still warm.
