Spicy beef stir fry in which, tender beef chunks/strips are tossed in a mix of spicy ingredients to give you a beef recipe aptly named devilled beef.

As always, I have tried to include as much detail as possible to give you the best chance of cooking up a restaurant-style spicy beef stir-fry.

  • What kind of beef should I use to make the Sri Lankan beef stir-fry?
    • Sirloin, ribeye, top loin (strip), and tenderloin can be used for spicy beef stir-fry.
    • If you can, choose tenderloin as this cut gives you the most tender meat.
  • How spicy is the devilled beef stir-fry?
    • The beef is really spicy so make sure you adjust the amount of pepper and chilli flakes to reduce the spiciness of the beef to your taste.

How to cut the beef for a stir-fry.

In a stir-fry, the meat needs to be cooked fast over medium flame for a short period of time and yet be tender, for this purpose the beef needs to be cut into thin strips but yet be slightly chunky in the middle.

  • Here’s how you cut beef for a stir-fry so it cooks faster.

1. find which way the muscle fibre of the grain runs(these look like small lines running over the meat).

2.  Once you know which way the lines on the meat are running, use a sharp knife and cut against these grains, by doing this, you are actually shortening the muscle fibres of the meat.

If you prefer to have chunky, pieces of beef for this devilled beef curry, then gently pound the beef for a few seconds just to break down the muscle fibres a bit more.

The best way to do this is to place the meat between a cling film and give a few short whacks on it.

RECIPE DIFFICULTY-EASY

Sri Lankan spicy Devilled beef stir-fry.

The ingredients mentioned below use standard measuring cups and spoons.

Ingredients to make devil beef

700g of beef(for best results I would suggest using boneless beef strips). 

2 tablespoons of black pepper

2 tablespoons of dark soy sauce

1/4 cup white vinegar(any type of vinegar should do)

3 tablespoons of oil

A sprig of curry leaves

1-inch cinnamon piece

1 tablespoon minced ginger

5 cloves of garlic minced

3 medium-sized onions cut into thick wedges

3 medium-sized tomatoes cut into slices

100g of banana peppers(malumiris, this would probably be 4-5, cut into a slight angle, substitute with 1 bell pepper)

3 tablespoons of tomato sauce(add more if necessary)

1 tablespoon of sugar

2 tablespoons of red chilli flecks

Salt to season

Method

Have all the ingredients ready before you make the devilled beef stir-fry.

Combine beef slices(700g), vinegar(1/4 cup), dark soy sauce(2 tbsp), pepper(2 tbsp)into a medium-sized bowl.

leave the beef to marinate for 20-30 minutes.

Place a frying pan or wok over low-medium heat and pour in the oil(3 tbsp).

Once the oil heats, add the marinated beef to the oil(make sure you don’t add any leftover liquid while transferring the beef to the pan). save the marinade to use later.

Semi-fry the beef slices while tossing them around for 10-12 minutes over medium heat until they turn brown(not too dark or crispy).

Once brown, set the beef on kitchen towels to drain excess oil.

Place the same pan you used to fry beef over medium heat.

Add a few tablespoons of oil if necessary then add curry leaves(a sprig), cinnamon(1″ piece), ginger(1 tbsp), garlic(5 cloves minced), onions(3 medium, cut into thick wedges), tomatoes(medium cut into wedges, banana peppers(100g malumiris, substitute with 1 bell pepper).

Do a quick stir-fry of these ingredients for 10 minutes.

Reduce heat and add the beef,

Add tomato sauce(3 tbsp), sugar(1 tbsp), salt to season, chilli flakes(2 tbsp), and pour in any left-over marinade from the meat.

Continue stir-frying the ingredients. 3-5 minutes.

Continue cooking, taste, and check if the seasoning is balanced and cook until the Sri Lankan beef is almost dry. 5 minutes.

Just reading the Ethod on how to make this spicy stir fry is making my mouth water. Looks great and delicious. I have almost all the ingredients at home except for Malu miris and vinegar. So i will just have to be patient and wait till i buy those and then i can make this delicious receipe. Thank you so much for sharing I am also SriLanka ❤️
