I don’t have self-raising flour, how can I make some or is there a substitute?

Add 2 teaspoon of baking powder for every 1 cup of flour, sift, store and use as needed.

Why are my Banana fritter balls not perfect spheres? 

The mixture for Banana fritter balls is wet which in turn makes it difficult to shape into balls so please don’t waste time on this.

  • Basically, this recipe is easy, you can whip up the fritters with a few ingredients that come together in a bowl. 
  • THE MOST IMPORTANT part of the recipe is getting the oil heated up to the correct temperature if the oil is too hot, the outer part of the balls will fry quicker than the inside, leaving it raw. 
     
  • Not everyone has a thermometer, including me, so use a wooden spoon to check if the oil temperature is right.
  • place the tip of the handle in the oil, if bubbles appear around the handle tip, then the oil has reached the required temperature to fry. 
  • The next issue is to keep the same temperature throughout the frying process without burning the fritters. 
  • Make allowance to get a few banana fritters that may look and taste wrong on your first try. You only get better by trial and error, if you are lucky, you’ll get it right the first time but by the third fritter, you’ll know how to adjust the heat if it’s too high or low which is the most important factor in getting the best banana fritters.

Choosing Bananas for the fritters.

Any type of banana would be ideal in making these fritters.

Overripe bananas are perfect for making banana fritters as they add extra natural sweetness and fragrance, this way you can actually avoid using sugar.

How do I fry the fritter balls without having a raw dough inside while it’s crispy outside?

As I mentioned above, the key is to have a steady temperature that is not too hot but a medium-low.

Don’t worry about the temperature by your third or fourth fritter you’ll know how long and how to keep the heat stable.

Easy deep-fried Banana fritter balls.

Makes 15-20 fritters depending on the size.

Please make sure to read the recipe instructions carefully to avoid mistakes.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

4-5 ripe Bananas

4 tablespoons of Sugar(reduce if necessary)

1 cup of flour

1 and 1/2 cup of self-raising flour

1/2 teaspoon Salt

3 cups of oil( depending on the size of the pan you are using you can reduce the amount of oil, the idea is to have enough oil to submerge the dough balls so they fry evenly)

Method

How to make the banana fritter batter.

Sift the plain flour, Salt and the self-raising flour together, set aside.

Peel Bananas, place them in a deep bowl, using a fork, mash them into a pulp. 

Add Sugar into the Banana pulp and mix.

Once both ingredients are combined well, add the sifted flour.

Since you want to keep the dough airy, incorporate the flour into the Banana but try as much to minimize the mixing by avoiding beating or whipping the mixture too vigorously, instead use slow movements to merge all the ingredients together.

leave the wet dough to rest for 5 minutes.

How to fry the banana fritters.

Place a deep pan over low-fire and pour in the oil.

Let the oil heat by gradually increasing the temperature to medium heat, heat oil for 1-2 minutes.

To check if the temperature is right, drop a piece of dough to see if it fries while turning golden or use the wooden spoon method mentioned above.

It’s important to keep the oil at a steady temperature avoiding it to smoke.

Once the oil is ready, low-medium heat, drop 1-2 drop spoonfuls of dough.

Since the mixture is a wet dough, you will not get perfect balls but oval-shaped Banana batter balls. 

To get the latter shape, you need to gently turn the dough repeatedly with your spoon making sure all sides of the dough fries evenly. 

Keep in mind, maintaining a slow low-medium oil temperature will help the inside of the banana fritter fry through. Once the Banana fritter balls turn pale gold, place them on paper towels to absorb any residue oil.

Serve warm with your favorite chocolate sauce or ice cream, for a simpler prep add a dusting of powdered sugar.
