Breakfast quesadillas with layers of curried chicken, scrambled eggs and freshly grated carrot, topped off with cheese wrapped up in Tortillas toasted. Mix and match any ingredients to your taste.

Breakfast idea 8- Breakfast quesadilla with chicken, scrambled eggs, grated carrots and cheddar cheese.
With a double dose of proteins from the chicken and eggs with a pinch of vitamin A from the carrots and cheese to hold all these ingredients together, there’s something for everyone in these healthy breakfast quesadillas.
If you believe there are too many layers in these quesadillas, well then you’ll be in for a surprise as the combination works well with a variety of flavors bursting in your mouth. But if you still think it’s too much then just do a mix and match combo of your preference and leave out the rest.
Why not have separate bowls for each of the ingredients and let everyone build their own quesadillas for their own variations?
My own quesadillas you see here are made out of whatever ingredients I had in hand, I purposely made them heavy but you can reduce the components and make them light as you like.
I’m still trying to avoid adding processed meat as much as I can, don’t get me wrong, my meal times would be much easier if I can add a bit of sausage meat here and there, especially in these quesadillas but I will avoid them as much as I can. For this reason, the chicken I’ve used are the curried chicken from last night. Don’t wash them but cut with the gravy for extra flavor.
RECIPE- BREAKFAST QUESADILLAS WITH CHICKEN, SCRAMBLED EGGS AND SHREDDED CARROT.
Please make sure to read the recipe instructions to avoid mistakes.
1 Carrot grated
1/2 teaspoon of Vinegar
1 teaspoon Sugar
A pack of tortilla or flat bread
4-5 tablespoons of oil
2 cups of shredded chicken or preferred meat(leftover curry meat works too)
Pinch of Turmeric
2 large Onions sliced
2 large Tomatoes chopped
2 green chilies chopped
3 large eggs
1 cup of shredded cheddar cheese(optional)
Salt to taste
In a bowl grate a carrot and season it with half a teaspoon of sugar, vinegar and set aside.
Shred the chicken into smaller pieces, I’m using leftover chicken meat from the previous night’s dinner.
Cook the chicken with Turmeric, chopped onions, chillies and Tomatoes, cook until they are soft, add salt to taste and transfer it into a small bowl.
Place a non-stick pan on medium heat, once the pan heats, whisk the eggs in a bowl. Pour the whisked egg into the non-stick pan and gently move your spoon in a swirling motion to scramble the eggs, cook the eggs until they are done, once the eggs are cooked, season with Salt and Pepper then transfer it into a dish.
Assembling the quesadillas.
Place a tortilla on a slow heating pan, spread the chicken and Onion mixture and a layer of scrambled egg evenly.
Add the grated carrots with the liquid squeezed out then top it off with the shredded cheddar cheese.
fold the quesadilla, place it in a pan and cook on low fire for two minutes, once the bottom side is cooked, turn the quesadilla onto the other side and cook.
Transfer the quesadilla to a plate, slice it into two and repeat until you have enough for the whole family.
Serve the quesadillas as it is or with your preferred sauce.
For kids who love tomato sauce on almost everything my kids actually opted to do without the sauce so I’m guessing the Breakfast quesadillas were successful.
