Bite-size muffin Pancakes

 

It’s the first day of school vacation and to make it special, I thought I’ll make these babies they are bite size, Sweet, and easy to make.

Just your usual pancake batter with one or two extra ingredients.

I’m  making them plain but what you add to them is up to you.The kids and I prefer the Sri lankan way of enjoying it, with KITHUL TREACLE!

Since I’ve got four mouths waiting for these to be done I made as much as possible and any leftovers would end up being eaten throughout the day. 

They loved it, I loved it, bet I’ll be making them every week until the kidos get tired and ask me to stop making them.

What you will need

1kg flour, all purpose flour

3 1/2 tablespoon sugar

2 Eggs

1 tablespoon Vanilla

1 Tablespoon Baking powder

2 and 1/2 Cups Butter Milk

To make butter milk

Add 1 and 1/2 tablespoon of vinegar.

(Buttermilk  has enzymes that react with Baking powder which makes the muffins light and fluffy,So plain old Milk won’t do.)

To make Syrup

1/4 teaspoon Salt

1 bottle of Kithul Treacle

3 Tablespoon Butter

Method of Making

1. To make the Treacle- Mix the Butter and Kithul Treacle together.

 2. To make the Pancake Batter

Sift the flour and mix all dry ingredients, first the flour, Sugar, Baking Powder and Salt.

 

Or let your mini helper join in and mix it while you make the Butter Milk as I mentioned earlier.add 1 and a 1/2 teaspoon of Vinegar to 2 and 1/2  cups of milk, let it sit for 5 minutes and you’ve got your Buttermilk.

 

 Add the wet ingredients, Buttermilk, Eggs (whisked), Vanilla and Butter.

 Mix until you get a smooth mixture.

 Time for experimenting ,can I use doughnut pancakes or bigger muffins? I think both.

O.k maybe I was a little messy but I do the cleaning around here and I can make all the mess I want, gently or not, pour the batter into the pans.

Preheat the oven to 400 degrees ,if your oven gives the temperature in Celsius  like mine does, cook it at 200 Celsius for 9 to 10 minutes. 

Now keep baking..

My mini-helper is smart, she knows if she doesn’t get some first, chances are for every single one she pops, the others would pop three or four.

 

 

I think it’s a hit!

As for me, I like to let the treacle soak into the doughnuts and then enjoy it.

 

 As for the experiment all of them came out great.

 But the winners were the mini muffins and Doughnuts, the bigger muffins were too dense to soak up the treacle.
