How to make teriyaki chicken

The ingredients mentioned below use standard measuring cups and spoons.

Ingredients to cook teriyaki chicken with peppers

1/4 cup teriyaki sauce(For the teriyaki sauce, follow the recipe for making teriyaki sauce.)

2 tablespoons of lime juice

750g chicken breast tenders, cut into bite-size pieces

3 tablespoons of oil

1 large red bell pepper cut into thick strips(remove seeds)

1 large green pepper cut into thick strips(remove seeds)

1 green chilli finely sliced(optional)

1 lime cut into thin slices for garnish(optional)

2 large onions cut into thick slices

Salt to season

Method

Have all the ingredients to make teriyaki chicken prepped and ready.

In a large bowl combine the teriyaki sauce and lime juice, transfer 2 tablespoons of the mixed sauce to a cup and set aside to use later.

Add chicken tenders into the bowl of teriyaki sauce marinade, mix together until the chicken is coated with it.

Cover and marinate for 15-30 minutes.

Place a skillet or wok over medium heat and pour in the oil

Transfer the chicken pieces to the oil and stir-fry while saving the leftover marinade to make a thick glossy sauce.

Let the chicken tenders cook in the oil. constantly move the pieces so they brown evenly.

5-7 minutes into browning the chicken, add the leftover marinade to the pan and leave the sauce to simmer with the chicken for 3 minutes over medium heat or until the sauce thickens.

Once the teriyaki sauce thickens, add the bell peppers and onions.

Cook for another 5 minutes over medium heat while tossing the ingredients around.

This would be the perfect time to check on the taste, season with salt if necessary, you can also increase the spiciness of the dish by adding extra chillies.

Cook until the teriyaki sauce has reduced and covered the chicken and bell pepper slices, remove the pan from heat.

Add the remaining spoons of teriyaki sauce to the pan, give it a quick toss and serve over a bowl of rice or noodles.
