Can I use any other type of onions instead of shallots?

The only reason I don’t use shallots in my regular cooking is that they are small and cleaning them can take a long time, especially when you cook daily for curries, hence the use of large onions. 

But when I have to make a marinade, I like using shallots because they have a much better flavor than regular large onions. this is the reason I’ve used shallots here because they are much sweeter and makes the perfect bitesize accompaniment to the potatoes which are small as well. 

So if you can please try to use shallots. 

How to peel shallots faster.

Here’s an easy way to peel the skin off the shallots faster. simply place them in water for a few minutes and the skin would just peel off.

Where can I find baby potatoes in Sri Lanka?

You can find these baby potatoes at keells, please keep in mind that they are not washed but just packed into regular bags, so when you get your hands on them, you will need to thoroughly wash and scrub them to get rid of any mud or dirt on them.

Ingredients

Ingredients mentioned below use standard measuring cups and spoons.

250g baby potatoes(this would roughly be about 20-25 baby potatoes)

100g of shallots

1 tablespoon of Italian seasoning

1/4 cup olive oil or any oil you prefer

Salt and pepper to season

Method

Peel the skin off the shallots and set them aside(see notes above on how to clean shallots faster).

Wash and scrub the potatoes well to remove dirt or any impurities, do not peel the skin(see notes above on,”Where to find baby potatoes in Sri Lanka).

Preheat oven to 190C.

Once you’ve cleaned the potatoes, cut them into half. you can bake them whole but cutting the potatoes in half, will make sure that they turn crispy and golden evenly.

Place the shallots and the baby potatoes in a baking pan, add the Italian seasoning and pour in the olive oil.

Season with salt and pepper and toss all ingredients well to combine.

Once you’ve tossed the potatoes and shallots with the seasoning, turn all the potatoes so that skin side is facing up.

Bake them at 190C for 30 minutes or until the skin side is crispy and golden. once the skin side is done,  take out the baking pan and gently turn the potatoes so that the inside of the potato is facing up and bake for a further 20-30 minutes or until golden brown and crispy.

You can serve it as they are or transfer the potatoes to a platter, garnish with extra Italian seasoning and serve immediately while they are still warm.
